Course Overview
American culture is deeply rooted in food as both comfort and celebration. Many of these family and social traditions have become customs that over time may hinder and even jeopardize our health and longevity. In this class, we will explore the history of food production up to the current state of agri-business; how we look at food on several levels – societal, personal (i.e. cravings) and non-food issues that could be triggers for dysfunctional eating habits; and, how the American diet lends itself to a broad range of chronic illnesses such as, cancer, diabetes, digestive disorders, A.D.D. and osteoporosis.

We will engage in the understanding that whole foods living is a life style, mind set and belief system that fosters long term wellness. All the while, making the process of learning how to eat more healthily simple, fun and delicious!
